Course Description


Through MIHCA’s 12-week intensive Professional Baking and Pastry Arts program, students will learn the fundamental skills and techniques needed to excel in a professional pastry kitchen. Students will begin the program learning baking essentials and safety and sanitation techniques, followed by bread; laminated dough and puff pastry making; quick bread and cookies; chocolate and dessert buffets; cakes and icings; pâte à choux for pies, cream puffs and custards; and entrepreneurial baking.

PROGRAM DURATION: 

  • Twelve (12) weeks plus 500 hours externship OJT 
  • Monday-Friday; Six (6) hours a day
